Fast food can be difficult when you follow a free-from diet, but Chipotle Grill's "fresh" approach makes it easier. They use whole food ingredients and their menu items are pretty straight forward (no mysterious milk-based ingredients lingering in marinades or sour cream folded into the guacamole). For that reason, they are a go-to eatery when my husband and I are traveling.
That said, I was elated to hear about the new Posole Soup, which has already hit Chipotle menus in Denver and Chicago and is reportedly scheduled to officially launch on January 19th, 2011. Not only does it offer a new dairy-free option, but it is also a lighter lunch option … both for your belly and your wallet.
The soup is "naturally" vegan, with a tomato and hominy base, vegetables, and seasoned with spices like cumin and fresh herbs like oregano, and an 8-ounce portion will only set you back $3.33. It can be garnished with chicken for $4.70, and the supreme upgrade with rice, chicken, and chips is $5.53.
