Thai is one of top three favorite cuisines. I love the complexity, the flavors that pop from the food, the care that goes into it, and just the fun factor of it. The dishes, whether they are curries or satay, are always ones that get people talking and even after I am full, I find myself sneaking a few more bites. While many people are familiar with some of what have become standard Thai dishes popularized in restaurants, we wanted to go beyond that in this issue and showcase the diversity of real Thai cuisine. That’s why you won’t just find a recipe for a massaman curry, you’ll also find a recipe for a curry made with fresh green peppercorns and a noodle bowl doused with a pureed ginger sauce. You will also find recipes for making your own fishless sauce and a whole article on how to find the right vegan substitutions for those essential Thai ingredients that aren’t. We also show you how to make your own curry pastes, covering authentic methods and modern time-saving cheats. It’s a big issue, over two-hundred pages, with a lot of ground that we cover.
