A few years ago, NotMilk by NotCo entered the market to rave reviews. It was arguably the first milk alternative to make a fairly successful attempt at mimicking the taste and consistency of dairy milk. Their portfolio quickly grew to include Whole Milk, 2% Reduced Fat, 1% Low Fat, Chocolate, and Barista varieties. But like countless other companies, NotCo has made changes to sustain profitability. The NotMilk product range has shrunk, and they are now abandoning the refrigerated aisle. But have no fear, NotMilk is still available in shelf-stable packages!
NotMilk is Not Milk, but AI Says it Tastes Just Like It
Because of the uniqueness in this brand, and their changes over the years, I’m going to answer a few FAQs before jumping into the ingredients and nutrition facts.
NotMilk FAQs
Was NotMilk Discontinued? As mentioned, the refrigerated NotMilk line has been discontinued. You will no longer find them in the refrigerated section at grocery stores. But NotMilk has not been discontinued! You can still buy it in shelf-stable packages. It’s available in multi-serve 32-ounce cartons and 8-ounces singles.
Did NotMilk Change their Formula? They have changed it a couple of times. We do our best to keep up with the changes in the ingredients and nutrition facts below. In the most major change, they removed the coconut and the chicory root. This reduced the fat, calories, fiber, and some say, the richness in the flavor. It also made some of those “odd” ingredients, like pineapple, a bit more prominent.
Who Owns NotMilk? This milk alternative was created by the Chilean company NotCo. They received backing from several prominent venture capitalists, including Jeff Bezos. But the company is still independent.
Is NotMilk Truly Dairy-Free? With all of the confusion around technology and food, it’s hard to tell what’s really dairy-free these days! Some companies are using genetic engineering to create real dairy proteins from plants. Those products are vegan but not dairy free! NotCo is using advanced technology, but for the formula, not the production process. They used AI to develop a recipe that replicates the taste and texture of dairy-based milk. It’s vegan AND dairy-free, from beginning to end, and is made with the ingredients listed below.
Whole (also available in singles)
Ingredients: water, sunflower oil, pea protein, contains less than 2% of: sugar, pineapple juice concentrate, dipotassium phosphate, calcium carbonate, gellan gum, acacia gum, salt, monocalcium phosphate, natural flavor, cabbage juice concentrate, vitamin d2, vitamin b12.
Nutrition (per 1 cup): 100 calories, 8g fat, 4g carbs, 0g fiber, 3g sugars (includes 2g added sugars), 4g protein. Fortified to achieve the following RDA percentages: 25% vitamin D, 25% calcium, 35% vitamin B12.*
Chocolate (also available in singles)
Ingredients: water, sugar, contains less than 2% of sunflower oil, pea protein, cocoa (processed with alkali), pineapple juice concentrate, calcium carbonate, natural flavor, acacia gum, gellan gum, salt, dipotassium phosphate, cabbage concentrate, vitamin d2, vitamin b12.
Nutrition (per 1 cup): 130 calories, 5g fat, 16g carbs, 1g fiber, 14g sugars (includes 13g added sugars), 4g protein. Fortified to achieve the following RDA percentages: 25% vitamin D, 25% calcium, 35% vitamin B12.*
Barista
Ingredients: water, sunflower oil, organic cane sugar, oats, contains less than 1% of: chickpea protein, chicory root fiber, pineapple juice concentrate, salt, tricalcium phosphate, dipotassium phosphate, gellan gum, acacia gum, natural flavor, cabbage juice concentrate
Nutrition (per 1 cup): 70 calories, 3.5g fat, 8g carbs, 1g fiber, 4g sugars (includes 3g added sugars), 1g protein. Fortified to achieve the following RDA percentages: 20% calcium.*
Discontinued NotMilk Varieties
NotCo has completely discontinued their 2% Reduced Fat and 1% Low Fat NotMilk milk alternatives in the U.S.
NotMilk NYC is Now Nuthatch
There was another company called NotMilk NYC. They’ve been around longer, but NotMilk from NotCo does has a trademark on the name, so they were forced to change their name. NotMilk NYC is now Nuthatch. Nuthatch is small-batch nut milk produced by real hands with simple whole food ingredients. NotMilk from NotCo is mass produced with technology for a mainstream appeal and price point. The post above is for NotCo’s product.

My new milk love.
Absolutely love it, the best real dairy milk replacement I have found. I was very pleasantly surprised when I took my first taste, I missed milk so much, I love milk but cant have it, and the famous milk without the lactose tastes like sugar water. Some of the other plant based milks just didn’t hit the spot on look, consistency, and especially taste. Not Milk is my new milk. I will definitely recommend it. Just getting into plant based food. This is a good alt for milk. Slight pineapple after taste. Good in cooking and tastes ok on its own. Looks like milk. It even turns coffee that creamy brown color and flavor. Just a bit of mild after taste less than other alt made with oat soy or others
What is the nutritional value?
Love the taste. great for people like me who are dairy free. However, not sure what the longer term health implications might be. And what is the nutritional value of the product?

Good in coffee
I use cow’s milk mostly just in coffee and small amounts in cooking. NotMilk works much better than other nut milks in coffee, particularly if I use my milk foamer. I’ve been recommending this product to everyone. Tastes great. I’m sorry they’ve changed the formulation–I’m still drinking black cap whole “milk”—hope it doesn’t affect the taste. Will try the new white cap to see.
They changed the recipe!! 🙁
NotMilk was amazing! 5 Stars! It completely satisfied my need for milk. And this week they’ve changed the recipe. The old recipe has the black lids. The new one has stubbier white lids. It’s still way better than the other alternatives and still good, but it is different and I’;m soooo disappointed. At didn’t realize it at first so when I saw the white cap and tasted something different, I thought it had been tampered with. I took it back to Wegmans to replace it and found all of the cartons on the shelf now have white lids (the “2%” still had black lids).
I compared ingredients lists: the new version removed all the virgin and regular coconut oil and it looks like that was replaced with an increased amount of sunflower oil . They also completely removed the fibre (by taking out the chicory root). The rest of the ingredients were fiddled with as well as evidenced by the rearrangement of their order in the ingredients list. Worst of all, the carton says NOTHING about the change. As if we aren’t supposed to notice. Boo!

The Best Tasting Not Milk
I tried a sample of this in Whole Foods. I bought two cartons at Sprouts Farmers Market. This is absolutely delicious. I don’t even like milk. I just had a whole glass of this NOT MILK and it is refreshingly tasty. I will only drink this and use it for cooking from now on. I used it yesterday when I made mac and cheese and it came out so tasty good.
Vitamin B12
Tastes good, but don’t use it for substitute for children, the vitamin B12 is the same as redbull, my kids heart was racing and he wasn’t sleeping after drinking this milk ..

This product has just 35% of the RDA for B12, while Red Bull has significantly more. If your child had a reaction to this product, you should report it to the company and seek medical attention for him.
Tastes like dairy milk
I love this product. It tastes and has the same mouth feel of dairy milk. I love that it is made without any animal being harmed.
My taste pallet
The Not Milk is delicious, but I can tell it’s well, not milk.
