A few years ago, NotMilk by NotCo entered the market to rave reviews. It was arguably the first milk alternative to make a fairly successful attempt at mimicking the taste and consistency of dairy milk. Their portfolio quickly grew to include Whole Milk, 2% Reduced Fat, 1% Low Fat, Chocolate, and Barista varieties. But like countless other companies, NotCo has made changes to sustain profitability. The NotMilk product range has shrunk, and they are now abandoning the refrigerated aisle. But have no fear, NotMilk is still available in shelf-stable packages!
NotMilk is Not Milk, but AI Says it Tastes Just Like It
Because of the uniqueness in this brand, and their changes over the years, I’m going to answer a few FAQs before jumping into the ingredients and nutrition facts.
NotMilk FAQs
Was NotMilk Discontinued? As mentioned, the refrigerated NotMilk line has been discontinued. You will no longer find them in the refrigerated section at grocery stores. But NotMilk has not been discontinued! You can still buy it in shelf-stable packages. It’s available in multi-serve 32-ounce cartons and 8-ounces singles.
Did NotMilk Change their Formula? They have changed it a couple of times. We do our best to keep up with the changes in the ingredients and nutrition facts below. In the most major change, they removed the coconut and the chicory root. This reduced the fat, calories, fiber, and some say, the richness in the flavor. It also made some of those “odd” ingredients, like pineapple, a bit more prominent.
Who Owns NotMilk? This milk alternative was created by the Chilean company NotCo. They received backing from several prominent venture capitalists, including Jeff Bezos. But the company is still independent.
Is NotMilk Truly Dairy-Free? With all of the confusion around technology and food, it’s hard to tell what’s really dairy-free these days! Some companies are using genetic engineering to create real dairy proteins from plants. Those products are vegan but not dairy free! NotCo is using advanced technology, but for the formula, not the production process. They used AI to develop a recipe that replicates the taste and texture of dairy-based milk. It’s vegan AND dairy-free, from beginning to end, and is made with the ingredients listed below.
Whole (also available in singles)
Ingredients: water, sunflower oil, pea protein, contains less than 2% of: sugar, pineapple juice concentrate, dipotassium phosphate, calcium carbonate, gellan gum, acacia gum, salt, monocalcium phosphate, natural flavor, cabbage juice concentrate, vitamin d2, vitamin b12.
Nutrition (per 1 cup): 100 calories, 8g fat, 4g carbs, 0g fiber, 3g sugars (includes 2g added sugars), 4g protein. Fortified to achieve the following RDA percentages: 25% vitamin D, 25% calcium, 35% vitamin B12.*
Chocolate (also available in singles)
Ingredients:Â water, sugar, contains less than 2% of sunflower oil, pea protein, cocoa (processed with alkali), pineapple juice concentrate, calcium carbonate, natural flavor, acacia gum, gellan gum, salt, dipotassium phosphate, cabbage concentrate, vitamin d2, vitamin b12.
Nutrition (per 1 cup): 130 calories, 5g fat, 16g carbs, 1g fiber, 14g sugars (includes 13g added sugars), 4g protein. Fortified to achieve the following RDA percentages: 25% vitamin D, 25% calcium, 35% vitamin B12.*
Barista
Ingredients: water, sunflower oil, organic cane sugar, oats, contains less than 1% of: chickpea protein, chicory root fiber, pineapple juice concentrate, salt, tricalcium phosphate, dipotassium phosphate, gellan gum, acacia gum, natural flavor, cabbage juice concentrate
Nutrition (per 1 cup): 70 calories, 3.5g fat, 8g carbs, 1g fiber, 4g sugars (includes 3g added sugars), 1g protein. Fortified to achieve the following RDA percentages: 20% calcium.*
Discontinued NotMilk Varieties
NotCo has completely discontinued their 2% Reduced Fat and 1% Low Fat NotMilk milk alternatives in the U.S.
NotMilk NYC is Now Nuthatch
There was another company called NotMilk NYC. They’ve been around longer, but NotMilk from NotCo does has a trademark on the name, so they were forced to change their name. NotMilk NYC is now Nuthatch. Nuthatch is small-batch nut milk produced by real hands with simple whole food ingredients. NotMilk from NotCo is mass produced with technology for a mainstream appeal and price point. The post above is for NotCo’s product.

Andy’s Not Milk review
My neighbors are vegan and brought me a carton of Not Milk, becaugh I am lactose intolerant and I couldn’t believe how good this stuff is. It has the same texture as Milk and very close in taste and no bloating. I’m am very impressed.

Best Dairy Free Milk for Toddlers!
Randomly came across this milk and had to give it a try. My almost two year old is allergic to dairy and cashews. He immediately loved the taste. By watching him drink it it seems he likes it better than almond. It is the creamiest dairy free we have found. Also has a great fat and protein content that helps him with gaining weight as that has been a concern of our pediatrician. Our family highly recommends and we tell everyone we know about it!
Best allergen free milk
Taste like real milk best milk sub I ever tried! No almond, no cashew, no dairy or soy amazing.
Good once you stop expecting it to taste like milk.
Due to the claim that this milk substitute tastes like milk, I initially disliked it because it most certainly does not taste like milk. You can, in fact, taste the plant ingredients, especially the pineapple juice. However, once I stopped expecting it to taste like cow’s milk, I liked it. It tastes good in black tea and cuts the bitterness like cow’s milk. It is now what I have in the mornings.
Just like real milk
The texture and taste is very similar to real cow milk. I like it more than the other nondairy alternatives I have tried. I have found a new favorite.
This does NOT taste like milk
This does NOT taste like milk. It’s sweet, you can tell it’s plant based. The look and texture is similar to milk though… but if you are expecting a milk taste I would not say this is it. Is it better than others? Sure. But, it does not replace milk 1:1.

I developed a casien allergy about the same time I became prediabetic. I haven’t missed sugar much, but I’ve sorely missed diary products. Nut milks and oat milk are yuck in my book – none of those products have made the grade for me. I’ve been doing without and and looking sadly on while everyone I know enjoys milk in their coffee.
NotMilk makes the grade. It is absolutely delcious. It’s great flavor and mouth-feel is stunningly close to milk. It tastes good in cereal, coffee, tea, grain-free baking, and smoothies. Fills a big hole in my comfort food list.
