A few years ago, NotMilk by NotCo entered the market to rave reviews. It was arguably the first milk alternative to make a fairly successful attempt at mimicking the taste and consistency of dairy milk. Their portfolio quickly grew to include Whole Milk, 2% Reduced Fat, 1% Low Fat, Chocolate, and Barista varieties. But like countless other companies, NotCo has made changes to sustain profitability. The NotMilk product range has shrunk, and they are now abandoning the refrigerated aisle. But have no fear, NotMilk is still available in shelf-stable packages!
NotMilk is Not Milk, but AI Says it Tastes Just Like It
Because of the uniqueness in this brand, and their changes over the years, I’m going to answer a few FAQs before jumping into the ingredients and nutrition facts.
NotMilk FAQs
Was NotMilk Discontinued? As mentioned, the refrigerated NotMilk line has been discontinued. You will no longer find them in the refrigerated section at grocery stores. But NotMilk has not been discontinued! You can still buy it in shelf-stable packages. It’s available in multi-serve 32-ounce cartons and 8-ounces singles.
Did NotMilk Change their Formula? They have changed it a couple of times. We do our best to keep up with the changes in the ingredients and nutrition facts below. In the most major change, they removed the coconut and the chicory root. This reduced the fat, calories, fiber, and some say, the richness in the flavor. It also made some of those “odd” ingredients, like pineapple, a bit more prominent.
Who Owns NotMilk? This milk alternative was created by the Chilean company NotCo. They received backing from several prominent venture capitalists, including Jeff Bezos. But the company is still independent.
Is NotMilk Truly Dairy-Free? With all of the confusion around technology and food, it’s hard to tell what’s really dairy-free these days! Some companies are using genetic engineering to create real dairy proteins from plants. Those products are vegan but not dairy free! NotCo is using advanced technology, but for the formula, not the production process. They used AI to develop a recipe that replicates the taste and texture of dairy-based milk. It’s vegan AND dairy-free, from beginning to end, and is made with the ingredients listed below.

NotMilk NYC is Now Nuthatch
There was another company called NotMilk NYC. They’ve been around longer, but NotMilk from NotCo does has a trademark on the name, so they were forced to change their name. NotMilk NYC is now Nuthatch. Nuthatch is small-batch nut milk produced by real hands with simple whole food ingredients. NotMilk from NotCo is mass produced with technology for a mainstream appeal and price point. The post above is for NotCo’s product.

Best alternative milk I've tried
I use the whole Not Milk and think it’s delicious for cereal, granola, smoothies and cooking. It’s actually perfect. Doesn’t separate when heated (makes wonderful chocolate not milk). I love it. My only criticism is the packaging–I can no longer recycle this kind of container.
Too sweet
Tastes very sweet and coconutty – I’ll stick with oat
Tastes almost exactly like cow's milk
This stuff is great. Buy it if you can find it. Comes in a carton NOT a plastic bottle, so it is better for the planet in two ways. And, it’s delicious. Tastes almost exactly like cow’s milk and I am not a vegan. SO so good. And I am just a random consumer who ran into this stuff; I don’t know the people who make it and sell it. If I did, I would tell them to come up with a different name. Also the company name NotCo or whatever it is, is peculiar. THE PRODUCT IS GREAT. Hope it stays around forever. Head and shoulders and leagues better than any other milk that is made from vegetables, beans or nuts.
I am a big fan of not milk whole
I tried all plant based milk productS and i am Happy to say that not milk is the closest product I have tasted that comes close to milk.. I am so happy to have found it and I’m a big fan… love it
After the first sips, it's just like milk
Since I love cereal and I have never been able to find plant-based milk that I felt tasted good with cereal, I was thrilled when I tried this product! The first taste has a slightly unique flavor, maybe a little sweeter than milk, but after that, it’s like your taste buds adjust and I couldn’t tell the difference between this product and dairy milk. YEAH! I can have cereal again!
The best tasting dairy alternative ever!
I use the whole and it tastes just as good, if not richer than dairy milk. I have tried many, many other alternative non-dairy milk products and in my test tasted opinion it is hands down by far the best!
Not Milk is the best
amazing flavor just like the real stuff, is as good as milk or better because has no animal protein. For oatmeal yummy for your coffee there is no difference just that is healthy and no sacrifice on flavor
Tastes just like dairy milk
This product is a game-changer when it comes to taste of non-dairy milks. It’s rich and creamy in either coffee or in cereal.
Absolutely awesome!
Absolutely unbelievable taste! I just bought my 4 th half gallon in the last 10 days. I have told anybody who liked milk about it! Hope not milk ice cream is on its way!
