A few years ago, NotMilk by NotCo entered the market to rave reviews. It was arguably the first milk alternative to make a fairly successful attempt at mimicking the taste and consistency of dairy milk. Their portfolio quickly grew to include Whole Milk, 2% Reduced Fat, 1% Low Fat, Chocolate, and Barista varieties. But like countless other companies, NotCo has made changes to sustain profitability. The NotMilk product range has shrunk, and they are now abandoning the refrigerated aisle. But have no fear, NotMilk is still available in shelf-stable packages!
NotMilk is Not Milk, but AI Says it Tastes Just Like It
Because of the uniqueness in this brand, and their changes over the years, I’m going to answer a few FAQs before jumping into the ingredients and nutrition facts.
NotMilk FAQs
Was NotMilk Discontinued? As mentioned, the refrigerated NotMilk line has been discontinued. You will no longer find them in the refrigerated section at grocery stores. But NotMilk has not been discontinued! You can still buy it in shelf-stable packages. It’s available in multi-serve 32-ounce cartons and 8-ounces singles.
Did NotMilk Change their Formula? They have changed it a couple of times. We do our best to keep up with the changes in the ingredients and nutrition facts below. In the most major change, they removed the coconut and the chicory root. This reduced the fat, calories, fiber, and some say, the richness in the flavor. It also made some of those “odd” ingredients, like pineapple, a bit more prominent.
Who Owns NotMilk? This milk alternative was created by the Chilean company NotCo. They received backing from several prominent venture capitalists, including Jeff Bezos. But the company is still independent.
Is NotMilk Truly Dairy-Free? With all of the confusion around technology and food, it’s hard to tell what’s really dairy-free these days! Some companies are using genetic engineering to create real dairy proteins from plants. Those products are vegan but not dairy free! NotCo is using advanced technology, but for the formula, not the production process. They used AI to develop a recipe that replicates the taste and texture of dairy-based milk. It’s vegan AND dairy-free, from beginning to end, and is made with the ingredients listed below.

NotMilk NYC is Now Nuthatch
There was another company called NotMilk NYC. They’ve been around longer, but NotMilk from NotCo does has a trademark on the name, so they were forced to change their name. NotMilk NYC is now Nuthatch. Nuthatch is small-batch nut milk produced by real hands with simple whole food ingredients. NotMilk from NotCo is mass produced with technology for a mainstream appeal and price point. The post above is for NotCo’s product.

Freakishly amazing
I’ve been searching for years for a milk substitute that actually tastes like milk. This stuff is as close as it gets — I know because I’ve tried pretty much every alt-milk product I’ve ever seen for sale in the stores where I shop.. Got some from Whole Foods, took it home, took a slug, and had to look again at the label to assure myself that it wasn’t cow’s milk. (I’ve read that Impossible Foods is creating a non-dairy milk that tastes like milk. If they can do better than this, I’ll be very impressed.)
The fact that the ingredients includes pineapple and cabbage concentrate is fascinating.
Some reviewers are complaining about the added sugar. Not Milk has 3 grams of sugar per cup: Regular whole milk typically has 10 – 12. I don’t see the problem.
At $4.99 for a half-gallon, the price is competitive with quality dairy and non-dairy milk products. I’m using it mostly for coffee and cereal, so the price-per-serving is pretty small.
Seriously, this stuff is the bomb.
Very Tasty!
Tried the lower fat kind and it surprised me. It has a great taste and the consistency is creamy. Wish it weren’t so costly.
Good and bad
Good: Taste quite similar to milk. It does taste a bit sweeter than normal milk though.
Bad: it has Sugar in the ingredients. Whhhyy ? :'( . I’d love a version without added sugar (or maybe coconut sugar instead).
Yep, not milk
Tastes sweet and doesn’t behave like actual milk – terrible product. Will stick to oat milk and ripple
Delicious
I only tried the 2% variety, but I’d like to try the whole “milk” Not Milk. The 2% had a very slight taste of condensed milk (which I love). I bought the Not Milk at Whole Foods; it was a little pricier than I’m used to paying for Silk, but I really enjoyed the taste. I think the whole Not Milk would be a treat.
added sugar
It is tasty and I would like it better without added sugar.
Dairy who?????
Tried this and my mind and taste buds agreed to never go back to dairy milk again!!!!! This stuff is delicious and healthy. I recommend this to anyone anywhere any time!!!!!!!!!
Tastes very similar to cow milk
With my kids being a super super picky eaters this milk was the only ONE that they would drink. Tastes good.
And let me tell you we tried many milk alternatives. I highly recommend it!!!
Better than milk!
Awesome taste and texture.. can’t wait until it’s available more places! If they need to change the name because of the other competing product, they should call it “Better Than Milk.. in every way!”
Great taste, really does mimic the taste of cow's milk
Before buying NotMilk, my daughter in college came to GoDairyFree to make sure it was safe for her, as she is anaphylactic to dairy – I was so proud. She said that at first it tastes like pina colada – the pineapple and coconut in it I am sure – and then tastes just like milk. She has never had cow’s milk before, but her friend verified that it did taste the same. She was pleased with the enhanced nutritionals and lower sugar in NotMilk and was looking forward to baking with it.
