A few years ago, NotMilk by NotCo entered the market to rave reviews. It was arguably the first milk alternative to make a fairly successful attempt at mimicking the taste and consistency of dairy milk. Their portfolio quickly grew to include Whole Milk, 2% Reduced Fat, 1% Low Fat, Chocolate, and Barista varieties. But like countless other companies, NotCo has made changes to sustain profitability. The NotMilk product range has shrunk, and they are now abandoning the refrigerated aisle. But have no fear, NotMilk is still available in shelf-stable packages!
NotMilk is Not Milk, but AI Says it Tastes Just Like It
Because of the uniqueness in this brand, and their changes over the years, I’m going to answer a few FAQs before jumping into the ingredients and nutrition facts.
NotMilk FAQs
Was NotMilk Discontinued? As mentioned, the refrigerated NotMilk line has been discontinued. You will no longer find them in the refrigerated section at grocery stores. But NotMilk has not been discontinued! You can still buy it in shelf-stable packages. It’s available in multi-serve 32-ounce cartons and 8-ounces singles.
Did NotMilk Change their Formula? They have changed it a couple of times. We do our best to keep up with the changes in the ingredients and nutrition facts below. In the most major change, they removed the coconut and the chicory root. This reduced the fat, calories, fiber, and some say, the richness in the flavor. It also made some of those “odd” ingredients, like pineapple, a bit more prominent.
Who Owns NotMilk? This milk alternative was created by the Chilean company NotCo. They received backing from several prominent venture capitalists, including Jeff Bezos. But the company is still independent.
Is NotMilk Truly Dairy-Free? With all of the confusion around technology and food, it’s hard to tell what’s really dairy-free these days! Some companies are using genetic engineering to create real dairy proteins from plants. Those products are vegan but not dairy free! NotCo is using advanced technology, but for the formula, not the production process. They used AI to develop a recipe that replicates the taste and texture of dairy-based milk. It’s vegan AND dairy-free, from beginning to end, and is made with the ingredients listed below.
Whole (also available in singles)
Ingredients: water, sunflower oil, pea protein, contains less than 2% of: sugar, pineapple juice concentrate, dipotassium phosphate, calcium carbonate, gellan gum, acacia gum, salt, monocalcium phosphate, natural flavor, cabbage juice concentrate, vitamin d2, vitamin b12.
Nutrition (per 1 cup): 100 calories, 8g fat, 4g carbs, 0g fiber, 3g sugars (includes 2g added sugars), 4g protein. Fortified to achieve the following RDA percentages: 25% vitamin D, 25% calcium, 35% vitamin B12.*
Chocolate (also available in singles)
Ingredients: water, sugar, contains less than 2% of sunflower oil, pea protein, cocoa (processed with alkali), pineapple juice concentrate, calcium carbonate, natural flavor, acacia gum, gellan gum, salt, dipotassium phosphate, cabbage concentrate, vitamin d2, vitamin b12.
Nutrition (per 1 cup): 130 calories, 5g fat, 16g carbs, 1g fiber, 14g sugars (includes 13g added sugars), 4g protein. Fortified to achieve the following RDA percentages: 25% vitamin D, 25% calcium, 35% vitamin B12.*
Barista
Ingredients: water, sunflower oil, organic cane sugar, oats, contains less than 1% of: chickpea protein, chicory root fiber, pineapple juice concentrate, salt, tricalcium phosphate, dipotassium phosphate, gellan gum, acacia gum, natural flavor, cabbage juice concentrate
Nutrition (per 1 cup): 70 calories, 3.5g fat, 8g carbs, 1g fiber, 4g sugars (includes 3g added sugars), 1g protein. Fortified to achieve the following RDA percentages: 20% calcium.*
Discontinued NotMilk Varieties
NotCo has completely discontinued their 2% Reduced Fat and 1% Low Fat NotMilk milk alternatives in the U.S.
NotMilk NYC is Now Nuthatch
There was another company called NotMilk NYC. They’ve been around longer, but NotMilk from NotCo does has a trademark on the name, so they were forced to change their name. NotMilk NYC is now Nuthatch. Nuthatch is small-batch nut milk produced by real hands with simple whole food ingredients. NotMilk from NotCo is mass produced with technology for a mainstream appeal and price point. The post above is for NotCo’s product.

No no no! Bring back the old formula!
If I could give it zero stars I would. I LOVED, and I mean LOVED this milk a while back… but after this past year/months, I took a carton out of my fridge, gave it a shake and instantly felt something was off. I poured it into my cup and it was thicker and slightly discolored. I had first thought that maybe the milk had went bad. I gave it a sip, ewwwwww. What is this?? I checked the back of the carton and noticed, they removed chicory root and coconut oil, and replaced it with cheap stuff like corn fiber and sunflower and/or canola. I never went back to this milk. I’ve moved on to Silk Next Milk. If anyone else has had the unfortunate same experience as me, try out Silk Next Milk. I think Wondermilk will be good too. I’ve only had ice cream made with it so far, but so far so good.

too bad my Northern CA local Whole Foods decided to stop carrying it for reasons unknown.
The Best Milk
This is the best plant based milk in the market. I only use the whole milk and chocolate milk version. Every single person I’ve introduced it to, has made it a staple in their refrigerator.
Smells so much lime the real one
I think the overall taste, consistency and smell is so much like the real deal, so that’s a good thing. So if you have had regular milk your entire life then it’s a no brainer definitely go and try it out. But if like me you’ve only had not dairy milks for quite some time, maybe like me you’ll find it hard to drink, i really wanted to like it but since the smell is very much like the cow milk i find it hard to drink.
Delicious Plant Based Alternative
I’m impressed, really. First one we saw available in Puerto Rico was the chocolate and it’s really, really tasty. Then came across the whole red label container and I’m even more impressed. My new favorite Plant Based milk alternative.
Love 'Not Milk'
We love this new product. It takes just like milk but without all the bad things that come with drinking real. milk. Finally, an alternative!
2% NotMilk Formula Change
The 2% version now uses a mix of vegetable oil to include canola oil! 2nd ingredient looks like this: Vegetable Oil (Sunflower and/or Safflower and/or Canola Oil). It doesn’t just say sunflower oil anymore. The ingredients on the NotMilk site is not accurate. The taste used to be better before this change. It no longer tastes good.
Was 5 star until they changed ingredients
I tried Not Milk a year ago and was addicted to it. February I seen they carried it in store and first thing I noticed was that it just plain didn not taste the same. Then I realized the ingredients changed. I had purchased the cold and shelf stable. I was shocked to see the cold non-shelf stable Not Milk had “soluble corn fiber”. I cannot have corn products. It seems they took out the good ingredients and replaced with cheap fillers I don’t want. I will not repurchase this. I dumped it down the drain.
The ingredients have changed again on NotMilk as of December 2022
I loved the original formula & ingredients list. However I recently bought Whole NotMilk as of Dec 2022 and the second ingredient listed is Vegetable Oil. The color is no longer white, it’s off white like Oat Milk. The flavor doesn’t like milk either. Sad they went with worse ingredients in turn making the product unsavory.

Was a 5 Star till they changed 🙁
Noticed the change in the 2% NotMilk carton we got. As soon as I tasted it and the thickness, I knew it was off. Thought we got a bad one but dates were good. We bought one yesterday I knew something wasn’t right. I googled if there was a change. I’m so mad!!! 2% NotMilk was the closest to dairy milk I ever had! Now I have to move on and find a replacement. You had a good thing NotMilk!! 🙁
