A few years ago, NotMilk by NotCo entered the market to rave reviews. It was arguably the first milk alternative to make a fairly successful attempt at mimicking the taste and consistency of dairy milk. Their portfolio quickly grew to include Whole Milk, 2% Reduced Fat, 1% Low Fat, Chocolate, and Barista varieties. But like countless other companies, NotCo has made changes to sustain profitability. The NotMilk product range has shrunk, and they are now abandoning the refrigerated aisle. But have no fear, NotMilk is still available in shelf-stable packages!
NotMilk is Not Milk, but AI Says it Tastes Just Like It
Because of the uniqueness in this brand, and their changes over the years, I’m going to answer a few FAQs before jumping into the ingredients and nutrition facts.
NotMilk FAQs
Was NotMilk Discontinued? As mentioned, the refrigerated NotMilk line has been discontinued. You will no longer find them in the refrigerated section at grocery stores. But NotMilk has not been discontinued! You can still buy it in shelf-stable packages. It’s available in multi-serve 32-ounce cartons and 8-ounces singles.
Did NotMilk Change their Formula? They have changed it a couple of times. We do our best to keep up with the changes in the ingredients and nutrition facts below. In the most major change, they removed the coconut and the chicory root. This reduced the fat, calories, fiber, and some say, the richness in the flavor. It also made some of those “odd” ingredients, like pineapple, a bit more prominent.
Who Owns NotMilk? This milk alternative was created by the Chilean company NotCo. They received backing from several prominent venture capitalists, including Jeff Bezos. But the company is still independent.
Is NotMilk Truly Dairy-Free? With all of the confusion around technology and food, it’s hard to tell what’s really dairy-free these days! Some companies are using genetic engineering to create real dairy proteins from plants. Those products are vegan but not dairy free! NotCo is using advanced technology, but for the formula, not the production process. They used AI to develop a recipe that replicates the taste and texture of dairy-based milk. It’s vegan AND dairy-free, from beginning to end, and is made with the ingredients listed below.

NotMilk NYC is Now Nuthatch
There was another company called NotMilk NYC. They’ve been around longer, but NotMilk from NotCo does has a trademark on the name, so they were forced to change their name. NotMilk NYC is now Nuthatch. Nuthatch is small-batch nut milk produced by real hands with simple whole food ingredients. NotMilk from NotCo is mass produced with technology for a mainstream appeal and price point. The post above is for NotCo’s product.

Weird artificial mango taste
This beverage have a very weird and strong “fake/artificial mango” taste. I couldn’t even cover the taste with REAL mango in my smoothie. I’ll finish it using it for more fruit smoothies but not this isn’t for me.
Strong taste and aftertaste
Certainly has a noticable and potent taste and an after taste that will stay with you some time. I’ll certainly stick to more neutral tasting lactose free milk like Oat/Soy/Almond.
Try it or Not
My neighbor gave me a 1/2 gallon carton. I was skeptical to even try it. I poured about 1/8 cup and drank it. I LOVED it. So I poured me about 2 cups and drank some more. I am amazed at the taste. I compared it with Almond milk, but I must say it is so much better. I will definitely buy some more.
I loved this product
So glad to have cereal again and not tasting a difference. Now you need to make a chocolate chip not ice cream. ????
Delicious!!!
I have been buying this product since I discovered it in my local supermarket, I’ve.started buying several at a time, because it’s always sold out, it’s the closest plant based product I’ve tried that comes.close to real milk!! It’s delicious!!!!
Very close to real thing to drink strait out of glass
Love it. I prefer the 2% better. It has less of an aftertaste and seems to taste most to me like regular milk. What they call whole notmilk has a pretty heavy vanilla aftertaste which is a bad but does not mimic the real thing. I have tried many type of alternatives this is best so far !
Unbelievable !
I it has been 15 years since I had my last glass of milk because I am lactose intolerant, milk makes me sick. The closest thing to milk I have tried was oat milk, but after tasting this product, I am just hooked. I now have a glass of milk after going to be. I am so grateful you created this amazing product, no only it does not make me feel sick but I also feel is helps the planet. Diary farms are very harmful to the environment and cruel to animal. Thank you!!
Love it
Not only is it delicious to drink but also low carb. You can cook with it, put on cereal and just drink it by the glass
Just tastes like sunflower oil and water
It’s a very good milk for cooking with! I used it in a corn chowder, and I enjoyed it very much! (: However, the milk itself tastes like sunflower oil, which isn’t really a pleasant taste? (I don’t think any oil is a desired taste, honestly). So when using it for cereal or dipping cookies in… I had to pour it down the sink. (It also made my cookies just taste like sunflower oil.) Very disappointing, especially because the packaging is kinda condescending and super confident for a product that falls short. At least soy, oat, and almond milk have tastes that are enjoyable.
Ehh
This does not taste like milk, but if you shake it enough it does have the texture of milk. It’s horrible on its own but it’s good for my nesquik or potentially for smoothies
