Ricotta has a certain type of texture. Even dairy people have a difficult time with it. That’s why you don’t see many companies making ricotta. I’ve spoken to a number of dairies and they say, well, it’s a temperamental product, it’s not that easy to make, there’s a lot of labor involved. It’s a very delicate and temperamental cheese.

Spoiled, nope
Second time I purchased it, I tried to use it outside of lasagna. When I made it with my lasagna I doctored it up a ton. At least a year had passed and my grocer was out of the alternative. This time I wanted to do stuffed shells but I remembered my first experience so I did some trial runs with other dishes. I couldnt get it right so 7/8 sat in my fridge for 2 months. I pulled it out to use since the best by date was 2 months away and I needed fridge space. Swore it had gone bad until I hopped on here. Ended up making a sauce with some flavoring advice from the tofutti site. That didnt work so I grabbed my liquid smoke, nooch and an hour later I had an edible sauce. Next time I will wait for the competitions to be restocked. I gave it 2 stars instead of one because I like how thick it is knowing I can stretch more out of it. They just need to make it way less sweet. It is not cream cheese. Making it a little sour is just confusing.
The worst vegan thing i’ve ever tasted
I was so excited to finally try this after it was brought to a store near me. It was sweet but sour at the same time. Very nasty texture and taste
Awful nasty don’t waste your money
Been vegan for 10 years worst thing I’ve ever tasted and I even tried to season it and add other vegan cheeses I liked nothing help, taste like plastic
The taste is the same as their Tofutti cream cheese. Yuck
The texture is like paste. The product tastes too sweet and nothing like ricotta cheese. I wish I could return the container to the store. It was too expensive to throw in the garbage. However, I cannot eat it.
Better than Ricotta (Tofutti)
Fantastic! Used it with roasted eggplant, Tofurky sausage, and sauce for lasagna and cannot wait to use it again!! Butternut-squashed stuffed shells comes to mind. It is subtle, blends/melts well. GREAT vegan alternative.
