    This Almond Milk Blanc Manger with Strawberry Puree is an official entry in the So Delicious Dairy Free Recipe Contest! Blanc-Manger is a sweet French dessert that is commonly made with milk or cream and thickened with gelatin, cornstarch or Irish moss. In this recipe, it is made dairy-free with almond milk and vegan with cornstarch.

    Ingredients
    For Strawberry Puree
    • ⅓- 1/4 pound fresh strawberries, washed and hulled
    • 2 tablespoons sugar
    • ½ tablespoon lemon juice
    For Almond Milk Blanc Manger
    • 1-2/3 cups plain almond milk
    • 3 tablespoons cornstarch
    • 2 tablespoons sugar
    Instructions
    To make the strawberry puree:
    1. Chop strawberries and put into a microwave-safe bowl.
    2. Stir in 2 tablespoons sugar and lemon juice.
    3. Cover with plastic wrap and microwave on high for 1 minute.
    4. Uncover, let cool then refrigerate until ready to use.
    To make the almond blanc manger:
    1. In a saucepan, combine cornstarch, 2 tablespoons sugar and almond plus.
    2. Stir and heat over medium-low heat and simmer stirring constantly. When the mixture starts to get thickened, turn off the heat (10-12 minutes).
    3. Pour the mixture into each serving cup or bowl. Let cool at room temperature for 10-15 minutes. Then refrigerate for 2-2.5 hours or until sets.
    4. When served, spoon the juice from the strawberry puree and spread on the blanc manger. Place strawberries on top.
