Banana Chocolate Chip Muffins
Serves: 18-24
  • 3 ripe bananas, mashed
  • 2 eggs, beaten
  • 1 cup white flour
  • 1 cup whole wheat flour
  • ¾ cups sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • ½ cup dairy-free chocolate chips (optional)
  1. Preheat oven to 375 degrees. Line muffin cups with papers or spray with oil.
  2. Mix the bananas and eggs together in a large bowl.
  3. Stir in the flour, sugar, salt, and baking soda. Add the chocolate chips if desired and blend.
  4. Put the batter into the muffin tins and bake 15-20 minutes.
  5. Remove from the pan to a rack to cool completely.
