Easy Applesauce Pancakes


We altered this one just slightly from a 5 star recipe listed on AllRecipes.com.  Serve with maple syrup, apple butter, or other topping of choice.

Special Diet Notes: Easy Applesauce Pancakes

By ingredients, this recipe is dairy-free / non-dairy, peanut-free, soy-free, vegetarian, and optionally nut-free.

Easy Applesauce Pancakes
Serves: 4
  • 2 cups dry pancake mix
  • 1 teaspoon ground cinnamon
  • 2 eggs
  • 1 cup applesauce
  • 1 teaspoon lemon juice
  • ½ cup dairy-free milk beverage (soy, rice, almond or oat will work fine)
  1. In a large bowl, stir together pancake mix and cinnamon. Make a well in the center of the pancake mix. Add the eggs, applesauce, lemon juice and rice milk; stir until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately ¼ cup for each pancake. Brown on both sides and serve hot.
