This week, on an episode of Style Network’s Pantry Raid, Chef Michael Schulson did a mojito with a twist … cucumbers. Sounds like the perfect drink to kick off a cocktail party with a refreshing note. Bottoms up!
Special Diet Notes: Cucumber Mojitos
By ingredients, this recipe is dairy-free / non-dairy, egg-free, gluten-free, nut-free, peanut-free, soy-free, vegan / plant-based and vegetarian.
- 2 cucumbers
- 1 cup lemon juice
- 1 bunch fresh mint leaves
- 16 ounces rum
- 16 ounces club soda
- ½ cup sugar
- Ice
- Peel and muddle the cucumbers, using a mortar and pestle if you have one.
- Combine muddled cucumber, lemon juice, mint, rum, club soda, sugar and ice.
- Stir and serve on a warm summer day.
