Decadent Chocolate Ice Cream Cups

Serves: 12 ice cream cups
Ingredients
- 2 cups all-purpose flour
- 2 cups sugar
- 2 teaspoon baking powder
- 2 teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- ¾ cup cocoa powder
- ½ cup canola oil
- 1 cup boiling water
- 1 cup plain milk alternative
- ¼ cup plain dairy-free yogurt
- Dairy-free ice cream (your favorite flavor), for serving
Instructions
- Spray mini shortcake pan (available at Williams-Sonoma) with nonstick cooking spray.
- Preheat your oven to 350ºF.
- Combine all ingredients, except the frozen dessert, in bowl of electric mixer. Mix on medium speed until smooth.
- Pour into prepared pan.
- Bake for 35 to 45 minutes.
- Allow to cool completely before removing the shortcakes from pan.
- Top with frozen dessert and other toppings as desired.
