- 2 cups fresh blueberries
- ½ cup olive oil
- ¼ cup balsamic vinegar
- 2 tablespoons honey (sub agave nectar for strictly vegan)
- 1 tablespoon lemon juice
- Salt, to taste
- Black pepper, to taste
- 2 large apples
- 2 (6-ounce) packages mixed lettuce (like Fresh Express 5-Lettuce Mix)
- 1 pint strawberries, halved
- 1 pint blueberries
- ½ cup toasted pecan halves
- Place the blueberries, olive oil, balsamic vinegar, honey, and lemon juice in your blender and puree until smooth.
- Blend in salt and pepper, to taste.
- Cut the apples into ¼-inch thick slices.
- Optional: Using a 1-1/2-inch diameter star-shaped cutter, cut the apple slices into stars.
- Place the lettuce mix in a large bowl;. Add the apples, strawberries, and blueberries. Sprinkle with the pecans.
