    These tasty, peach-topped waffle bites are such a fun little snack or even a healthy breakfast, with delicious appeal for both kids and adults.

    I admit that I sometimes get in a snacking rut, and dark chocolate might be my top go-to. Lately, I’ve upped my game with these Peanut Butter Cup Bars, but I was excited to discover this chocolate-free waffle bites idea – something to satiate my sweet tooth but still with substance and low added sugar.

    Using dairy-free cream cheese on these waffle bites adds a tangy, savory contrast to the peaches. But if that topper isn’t available for you, coconut cream is a tasty, naturally sweeter stand-in. You can optionally add a touch of vanilla to the coconut cream – it compliments yet tames the coconut flavor.

    Ingredients
    • 1 whole-wheat or gluten-free frozen waffle (both Van's and Nature's Path offer great options)
    • 2 tablespoons dairy-free cream cheese alternative (such as Daiya) or coconut cream*
    • ⅛ teaspoon ground cinnamon
    • ½ cup jarred sliced peaches, drained and diced
    • 2 teaspoons chopped walnuts, toasted
    Instructions
    1. Toast the waffle and cut it into quarters.
    2. In a small bowl, combine the cream cheese alternative or coconut cream and cinnamon. Spread it over the waffle bites.
    3. Top each bite with the diced peaches and sprinkle with walnuts.

      I am so up for this 10 day challenge! I was excited to see the recipes, however, I am totally bummed out that the nutritional information is not posted!!!!! I am a diabetic and need to know the amount of carbohydrates in a serving of something I eat. I thought this would be easier…
