    Rich Vegan Hot Chocolate with a Double Dose of the Good Stuff

    This rich vegan hot chocolate is made with both cocoa powder and melted dairy-free chocolate chips for more depth in flavor. You can make it with your favorite dairy-free milk beverage, but some varieties perform better than others. Soymilk, for example, tends to curdle more easily. Coconut and nut milk beverages work quite well, or you an use oatmilk beverage if you’re a fan. Brands like Planet Oat are popular for hot beverages. I’ve also included a creamier option along with both stove top and microwave instructions.

    The addition of dairy-free chocolate chips adds luxurious cocoa butter for a more decadent flavor and full-bodied consistency.

    Ingredients
    • 1½ cups unsweetened dairy-free milk beverage
    • ¼ cup dairy-free semi-sweet chocolate chips
    • 3 tablespoons sugar (can sub your sweetener of choice)
    • 1 ½ tablespoons cocoa powder
    • ⅛ teaspoon vanilla extract
    • Pinch salt (optional)
    Instructions
    1. Put the milk beverage, chocolate chips, sugar, cocoa powder, and vanilla in a small saucepan and whisk to combine.
    2. Place the pan over medium-low heat, and heat, while whisking, until the chocolate is melted, the sugar is dissolved, and the beverage is very hot. Whisk in a pinch of salt, if desired.
    3. Let the hot chocolate cool to your desired temperature before serving.
    Notes
    Microwave Instructions: Heat all ingredients together in a microwave-safe container for 30 seconds. Stir and then continue to heat in 30 second intervals until very hot. Let cool to your desired temperature before serving.

    Creamy Tip: To make this hot cocoa even creamier, use 1 cup of milk beverage and ½ cup of dairy-free creamer or lite canned coconut milk.

    Serving Options: Top with marshmallows. And don’t be shy! If you love chocolate, dribble a few chips on top for an extra chocolaty bite. It makes a pretty decoration too (any excuse for chocolate is good)! Or stir with a candy cane to add a dose of festive peppermint flavor. OR top it with dairy-free whipped cream and some more chocolate chips!
