Special Diet Notes: Simple Roasted Asparagus

- 1 lb fresh asparagus
- 2-3 tablespoons olive oil
- salt and pepper
- Preheat oven to 400ºF
- Trim off dry ends of asparagus.
- Place asparagus in oven-proof dish and toss with olive oil and a pinch or two of salt until all asparagus is coated.
- Roast in 400 degree (Fahrenheit) oven for 10-15 minutes or until cooked.
- If desired, add salt and pepper to taste.
