    Summer is the perfect season to indulge in Mexican-inspired dishes, dips and drinks. And watermelon is a versatile fruit with a flavor profile that pairs perfectly with many of the ingredients in traditional Mexican recipes. Sweet and juicy watermelon is a great way to cut the heat of spicier foods, and its texture lends an unexpected, satisfying crunch in dips, like this Pineapple Mango Watermelon Salsa.

    You can serve this tropical salsa with chips for a fresh appetizer or snack. Or, you can use it as a flavorful, light sauce over fish, chicken or even tofu. It’s also a naturally dairy-free, plant-based, and allergy-friendly way to add flavor to tacos or burritos.

    This tropically-inspired salsa is a delicious blend of sweet and savory flavors that goes well with chips, or as a light topping on tacos, fish, or chicken.

    Ingredients
    • 2 cups diced seedless watermelon
    • 1 cup diced fresh pineapple
    • 1 cup diced fresh mango
    • 1 cup trimmed and sliced scallions
    • ½ cup chopped fresh cilantro
    • 4 limes (juice only)
    • Salt, to taste
    • Black pepper, to taste
    Instructions
    1. Add the watermelon, pineapple, mango, scallions, cilantro and lime juice to a large serving bowl and toss to combine
    2. Just before servings, season with salt and pepper to taste.

    Sodium Note: The nutrition facts are without added salt. Every ¼ teaspoon of salt added to the recipe adds 50mg of sodium per serving.
