Summer Coffee Drinks: Cool Vegan Cocktails and Mocktails


It’s difficult for people to agree on the perfect dairy-free iced mocha. But we have a selection of cool at-home summer coffee drinks that are naturally free of milk and cream. I guarantee that at least one of these beverages will satisfy your java cravings, and all of the recipes are perfect for entertaining.

Summer Coffee Drinks - Cool Vegan Cocktails and Mocktails (Breakfast Sangria, Cucumber Mint Hard Lemonade and High Octane Apple-tini Recipes)

The creative inspiration for these cool summer coffee drinks comes from Starbuck’s VIA Ready Brew line of instant coffees. Their little VIA packets each contain a little over a tablespoon of instant coffee, and come in a variety of tastes and flavors. However, for the recipes below, we recommend keeping it simple with their French Roast, Italian Roast, or Columbia Coffee selections (decaf, if you wish). These are the “pure” VIA brews, which are made with 100% coffee beans and no added ingredients.

By ingredients, all three of these recipes are dairy-free / non-dairy, egg-free, gluten-free, nut-free, peanut-free, soy-free, vegan, plant-based, and vegetarian.

Breakfast Sangria

Serves: 6 to 8 servings
  • ¼ cup sugar
  • 3 cups cranberry juice
  • 1 cup orange juice
  • 1 cup blueberries
  • 1½ cups strawberries, quartered
  • 1 orange, with zest removed and sliced into ¼-inch wheels
  • 2 full tablespoons instant coffee (2 packets Starbucks VIA ready brew)
  • 1 cup soda water
  1. Combine sugar, juices and fruit in a pitcher. Stir to dissolve sugar. Let chill for several hours.
  2. Before serving, dissolve coffee with a tablespoon of hot water in a large glass.
  3. Add a cup of the juice mixture and stir to fully combine.
  4. Add this coffee mixture back into the sangria pitcher and stir to combine.
  5. Right before serving, mix in the soda water.
  6. Combine the zest with an equal amount of sugar. Dip moistened rims of tall glasses into the orange-sugar mixture for a sparkling visual and flavor.
  7. Fill the glasses with sangria mixture.
High Octane Apple-tini

Serves: 2 martinis
  • 1 full tablespoon instant coffee (1 packet Starbucks VIA Ready Brew)
  • 1 cup apple juice
  • 3 tablespoons vanilla vodka
  • ½ cup ice
  • ½ lime, chopped
  • 1 apple, sliced into thin wheels for garnish (core is in the center of the wheel)
  1. Dissolve coffee with a tablespoon of hot water in a shaker.
  2. Add apple juice, vodka, limes and ice.
  3. Place lid on top of the shaker and shake vigorously for 20 seconds.
  4. Strain liquid into martini glasses.
  5. Place a thin apple wheel on top to garnish.
Cucumber Mint Hard Lemonade

Serves: 8 servings
  • 1 full tablespoon instant coffee (1 packet Starbucks VIA ready brew)
  • 4 cups lemonade
  • 2 teaspoons sugar
  • ½ cup cucumber, peeled, seeded and grated
  • 1 cup gin
  • 1 cup loosely packed mint
  • Ice
  1. Dissolve coffee with a tablespoon of hot water in a pitcher.
  2. Add lemonade, sugar, cucumber, gin and mint.
  3. Chill for several hours.
  4. Serve over ice.
