This lovely avocado salad recipe is infused with three types of avocado: avocado oil, avocado mayonnaise, and sliced ripe avocado. It’s all served on a bed of julienned or spiralized zucchini and garnished with strawberries, basil, and red chili pepper. The end result is very nutritious, but also full of fresh flavor.
This triple avocado salad recipe was shared with us by Hunter & Gather Foods. They also supplied the stunning photos! Hunter & Gather is a small UK company that produces Avocado Oil Mayonnaise and Cold Pressed Extra Virgin Avocado Oil.
Their avocado oil is pure and unrefined, yet it still has a high smoke point (255ºC / 490ºF). Therefore, it’s great for nearly every recipe application, from drizzling to baking to frying.
The avocado mayonnaise has just 4 ingredients, and is labeled as keto and paleo-friendly.
Hunter & Gather is currently only available in the UK, and not yet available to North Americans. But we can all still enjoy this wonderful zucchini, strawberry and triple avocado salad recipe.
Special Diet Notes: Triple Avocado Salad
By ingredients, this recipe is dairy-free / non-dairy, optionally egg-free, gluten-free, grain-free, nut-free, peanut-free, soy-free, optionally vegan, plant-based, vegetarian, and paleo-friendly.
- 2 small zucchini
- 1 red chili pepper, seeded and sliced
- 1 tablespoon avocado mayonnaise (see Vegan Option below)
- 1 tablespoon basil leaves, roughly torn
- Pinch Himalayan sea salt
- Pinch black pepper
- 2 handfuls strawberries, hulled and chopped
- 1 avocado, sliced
- 1 tablespoon avocado oil
- Grate the zucchini into long thin strips or spiralize it.
- Place the strips in a large mixing bowl. Add the chili pepper, mayonnaise, basil leaves, salt, and pepper and stir to combine.
- Divide the salad between two bowls and garnish with the strawberries and avocado. Finish it with the avocado oil.

You had me at avocado! I think I have everything in the fridge to make this for lunch tomorrow, provided my last avocado is good… a chance worth taking.
Avocados are definitely finicky! I try so hard, but still lose one once in a while.
I’m so happy to find a another recipe to use this pile of zucchini! Avocado and strawberries are a great texture to add to the crisp zucchini.
