This lovely avocado salad recipe is infused with three types of avocado: avocado oil, avocado mayonnaise, and sliced ripe avocado. It’s all served on a bed of julienned or spiralized zucchini and garnished with strawberries, basil, and red chili pepper. The end result is very nutritious, but also full of fresh flavor.

  1. You had me at avocado! I think I have everything in the fridge to make this for lunch tomorrow, provided my last avocado is good… a chance worth taking.

  2. I’m so happy to find a another recipe to use this pile of zucchini! Avocado and strawberries are a great texture to add to the crisp zucchini.
