These sweet crispy treats are a breeze to whip up and can last in the freezer for quite some time.

Ingredients
14 to 15 peppermint-chocolate sandwich cookies (Candy Cane Joe Joe’s, Mint Oreos, etc.) or chocolate sandwich cookies + 1 to 1-1/2 Teaspoons Peppermint Extract (to taste)
Put the buttery spread or oil in a large saucepan over low to medium-low heat. Once melted, add the marshmallows or creme and stir until melted and smooth. This takes about 5 minutes. Stir in the chocolate until smooth.
Add the crispy rice cereal and crushed cookies add quickly stir until combined. I start with 4 cups of crispy cereal and add more as needed (see the notes in the post above).
Firmly press the mixture into a greased baking dish. An 8 x 8-inch dish will make taller, full-sized crispy treats, while a 9 x 13-inch will make thinner, bite-sized crispy treats.
Let the crispy treats cool completely before cutting them into squares. You can briefly freeze them to help them set up more quickly.
