Summary:

I was pleasantly surprised by the delicious taste of the dairy-free ricotta in this wholesome and virtuous vegan frozen meal. The only downfall was the slightly lackluster marinara, but overall, a tasty light and lean vegetarian dinner.

Every once in a while, I spot a little dairy-free gem on sale. Something that I normally wouldn’t purchase, but thanks to a quick discount and some serious curiosity, it sneaks into my shopping cart. Such was my discovery of Rising Moon Organic Primacotta Frozen Entrees. Unfortunately, the Primacota Entrees were discontinued, BUT they were replaced with Rising Moon’s Slim Trim vegan frozen entrees that appear to be quite similar.

I decided to sample the Stuffed Shells with dairy-free and vegan ricotta. Admittedly, my expectations weren’t high, after all, it’s a frozen entree. So imagine my surprise when I inhaled all three jumbo shells in what seemed like mere seconds. The dairy-free ricotta used in Rising Moon Organics’ vegan frozen entrees is surprisingly delicious. Yes, it is soy-based, but they use organic whole soybeans (not soy protein isolates) and organic extra-virgin olive oil rather than canola. I think they do a pretty good job at balancing ingredients, quality and taste.

The pasta itself was thick, but tender and cooked up a touch al dente (with the microwave instructions). My only substantial complaint was that the marinara sauce was good, but not great in my opinion. It lacked some substance.

Though I only trialed the Stuffed Shells, it appears that all three of the vegan frozen entrees with dairy-free ricotta are quite similar in ingredients, just with unique presentations (stuffed shells, tubular manicotti, or layered lasagna). To note, there may be slight differences in the version I tried and the newer Slim Trim vegan frozen entrees, as they did cut the calories, fat and sugars down by a bit.
