Summary:

I was pleasantly surprised by the delicious taste of the dairy-free ricotta in this wholesome and virtuous vegan frozen meal. The only downfall was the slightly lackluster marinara, but overall, a tasty light and lean vegetarian dinner.

Every once in a while, I spot a little dairy-free gem on sale. Something that I normally wouldn’t purchase, but thanks to a quick discount and some serious curiosity, it sneaks into my shopping cart. Such was my discovery of Rising Moon Organic Primacotta Frozen Entrees.

I mean, how could I pass up a taste test of Stuffed Shells with dairy-free and vegan ricotta? My expectations weren’t high, after all, it’s a frozen entree. So imagine my surprise when I inhaled all three jumbo shells in what seemed like mere seconds.

The dairy-free ricotta for their Primacotta Frozen Entrees is delicious. Yes, it is soy-based, but they use organic whole soybeans (not soy protein isolates) and organic extra-virgin olive oil rather than canola. Rising Moon seems to do a pretty good job at balancing quality and taste.

The pasta itself was thick, but tender and cooked up a touch al dente (with the microwave instructions). My only substantial complaint was that the marinara sauce was good, but not great in my opinion. It lacked some substance.

Though I only trialed the Stuffed Shells, from what I could tell in reading the packages all three Primacotta frozen entrees are probably very similar in taste, the others are just Manicotti or Lasagna in presentation. The shells clocked in at 370 calories, 10 grams of fat, 6 grams of fiber, 4 grams of sugar, and 16 grams of protein for a nice light and lean vegan meal.
