This fresh tasting vinaigrette has a very strong, but pleasant balsamic flavor. The rosemary was more understated, but noticeable nonetheless. We enjoyed this naturally bold mix, as a little seemed to go a long ways. We trialed it as a chicken breast marinade on two occasions. We were surprised to find that the flavor it imparted was very subtle. However, on the second occasion we opted to dice the chicken over a fresh green salad, and top it with an additional touch of the Rosemary Balsamic Dressing. The result was delicious. In my opinion, this dressing truly shines as a flavorful addition to most salad and vegetable dishes. But by far my favorite use was in a simple pasta salad. I combined just 2 Tablespoons of this dressing with two servings of cooked whole-wheat pasta, solid albacore tuna, olives, tomatoes, and fresh spinach, and served it immediately. It was fabulous! I believe Drew’s Rosemary Balsamic Vinaigrette would be excellent for roasting diced potatoes and vegetables, as well as for dressing up a rosemary potato salad. It seems I will need to buy another bottle in order to try these dishes out!
