Each variety is now fermented with age-old cheesemaking methods and made with a base of gluten-free oat cream. Yes, this beloved free-from line is still vegan and allergy-friendly. Daiya crafts their “cheeses” purely with dairy-free, non-GMO ingredients, from start to finish. But Daiya Dairy-Free Cheese Shreds have a slightly different formula from the Daiya Blocks, Slices, and Sticks. So we’ve broken them out into this separate information and review post.
Daiya takes Cues from Traditional Cheese-Making for New Dairy-Free Shreds
According to Daiya, by applying time-tested techniques used to make dairy cheese, they’ve been able to better mimic the melt and stretchy consistency of dairy cheese. The oat cream is intended to provide a creamier, richer mouthfeel. But you be the judge! Cheddar
Ingredients: daiya oat cream™ blend (water, oat flour, pea protein, cultures, enzymes), coconut oil, tapioca starch, expeller pressed safflower oil, corn starch, less than 2 percent of: konjac flour, fruit and vegetable juice (for color), yeast extract, annatto (for color), salt, dextrose, tricalcium phosphate, xanthan gum, lactic acid, natural flavors.

It is so much better than before! I tried it in soup and it melted perfectly. And good flavor!
Daiya shredded cheddar cheese
I tried the shredded cheddar and I’m sorry I saw or taste no difference from the old to the new recipe I put it in scrambled eggs still no cheese taste nor did it melt that good

Since I had to go DF 5 yrs ago, I have missed the mouth feel & melt of real cheese. You guys nailed it with the new recipe! Way to go!
Improved Taste and Melts Easily!
I purchased the Cheddar & Mozza flavor and the Mozzarella flavor shreds. The flavor of both has improved a lot with no bitter aftertaste. I used the shreds for nachos, omelets, and breakfast burritos. The shreds melt easily in the microwave and toaster oven and are stretchy like regular cheese. Overall, I like the new formula.
