One of the original gluten-free lentil pasta makers has finally ventured into dairy-free “mac and cheese.” Modern Table Vegan Mac is now available in Classic Cheddar Style, White Cheddar Style, and Southwest.
Modern Table isn’t a dairy-free company, as evidenced by their traditional Mac & Cheese line that contains dairy. But we’re happy to see them jumping on the plant-based bandwagon with this high protein option. Their pasta actually provides complete protein, with all nine essential amino acids.
Modern Table Vegan Mac Gets Cheesy with 3 Protein-Packed Varieties
Truth be told, I was a much bigger fan of Modern Table pasta when it was purely lentils. The rice-lentil-pea protein blend isn’t my favorite gluten-free pasta formula, but this Vegan Mac is already receiving raves from customers. Classic Cheddar Style

We were impressed!
It doesn’t look like a lot when you first cook it up, but my husband and I found it to be a light filling lunch for two in a pinch. We had to use oil and water for a couple of the boxes we had (instead of buttery spread and milk beverage), and they still turned out delicious! In fact, I tried it with milk beverage and went back to using water. Buttery spread adds a little salty flavor.
The Southwest is surprisingly spicy, and we loved the flavor. The other two are good also, and just cheesy enough. The noodles didn’t cook quicker than the directions for me, but they do go from gummy to very soft much quicker than wheat noodles, so you have to be on top of them! I wouldn’t call this gourmet, but for convenience, it’s quite tasty and cooks very quickly.
Great mac and cheese
Im lactose intolerant. Loved Kraft mac and cheese. It was my favorite. This is the closest mac and cheese i have found. Love it.
Tasty and satisfying
The white cheddar style was very good. The sauce tasted like cheese sauce! The spirals cooked much quicker than the directions stated. It would be easy for them to become mushy, so be aware. But if cooked correctly the texture was good! Loved the fact that there are lentils in the pasta!
