Tasting Notes for The Inspired Cookies
These cookies are nothing short of delicious. They were happily enjoyed by our entire household, gluten-free or not. The unique texture of each cookie did give away its gluten-free nature. They definitely had the crumb of a rice flour-based treat. However, they were completely cohesive and tender – quite the feat for a vegan and gluten-free goodies.
Although, what initially excited me most were were the unique flavor offerings. Unfortunately, since our initial review , many of The Inspired Cookie flavors have been discontinued. Nonetheless, they have added Brownies and a Clarity Cookie (peppermint chocolate chunk), which we have sampled. Of the remaining flavors, we sampled these:
Enlightenment (Espresso Lemon Chocolate Chunk)
I am not a coffee fan, so this cookie didn’t wow me as much as the others, but it won’t let down your average mocha fan. A calm infusion of espresso filled the cookie base with caffeinated warmth, while the semi-sweet chocolate chunks added that coffee shop indulgence.
Tranquility (Lemon Lavender)
Lemon Lavender is such a unique flavor combo for a cookie. But they worked in sweet harmony in this one! Not too sweet, but definitely a cookie. I can see where the name Tranquility comes from for this pleasant cookie; it put a big, content smile on my face.
