We were truly pleased with the taste, texture, and performance. Like regular ricotta, you might need an egg or similar alternative that sets up when cooked to mix with it for fillings like ravioli. I was hopeful that it would work alone since it’s quite thick, but it did get a little lost in the flavor once boiled (like dairy ricotta does). That said, I loved it dolloped on pasta, veggies, etc. It added such nice flavor and creaminess!
