Happy Cinco de Mayo! For this festive celebration, I have an amazing coconut lime dressing recipe from Erin Bosdet of Simply Dish.
Erin gives this coconut lime dressing its creamy consistency with a blend of ripe avocado, coconut oil, and unsweetened coconut milk beverage. The recipe is healthy, tasty, and summer-ready with fresh flavors and a beautiful green hue.
Just be sure that all of your ingredients are brought to room temperature before blending. Coconut oil solidifies when cooled even a little, so it will firm up and leave little pieces in your creamy concoction if any other ingredients are chilly.
Special Diet Notes: Creamy Coconut Lime Dressing
By ingredients, this recipe is dairy-free / non-dairy, egg-free, gluten-free, grain-free, nut-free, peanut-free, soy-free, vegan / plant-based, and vegetarian.
For a paleo coconut lime dressing, use 3 tablespoons full-fat coconut milk (like Culinary Coconut Milk) + 1/3 cup water in place of the coconut milk beverage.
- 1 fairly ripe avocado
- ½ cup So Delicious® Unsweetened Coconut Milk Beverage, room temperature
- 2 tablespoons coconut oil
- 1 to 2 tablespoons agave nectar
- Juice of one lime (really juice it!)
- Pinch salt
- Pinch black pepper
- Toss all of the ingredients into a tall mason jar, starting with 1 tablespoon of agave nectar.
- Using a smart stick or hand blender, mix until smooth. Alternately, you can use a blender.
- Taste test, and blend in more agave nectar if desired.
- Drizzle over your salad and enjoy.
