Special Diet Notes: Cheesy Potato Casserole

- 10 potatoes
- ½ cup mayonnaise or Vegenaise for vegans
- 1 package soy cheese, chopped
- Dash sea salt
- Boil potatoes. When cooked, drain and mash potatoes. Place in oven proof bowl.
- Add ½ cup mayonnaise or vegenaise.
- Add chopped soy cheese.
- Sprinkle with sea salt to taste.
- Bake at 350 degrees for 30 minutes or until browning starts.
