    Ingredients
    • 10 potatoes
    • ½ cup mayonnaise or Vegenaise for vegans
    • 1 package soy cheese, chopped
    • Dash sea salt
    Instructions
    1. Boil potatoes. When cooked, drain and mash potatoes. Place in oven proof bowl.
    2. Add ½ cup mayonnaise or vegenaise.
    3. Add chopped soy cheese.
    4. Sprinkle with sea salt to taste.
    5. Bake at 350 degrees for 30 minutes or until browning starts.
    Notes
    The free-from status of this recipe will vary depending on the ingredients you use. Be sure to pick a vegan soy cheese (oddly enough, some brands of soy cheese do contain casein, and are not dairy-free - find the vegan ones!) and if you want to keep it egg-free and vegan, use a vegan mayo like Vegenaise. Check the ingredient labels of your soy cheese and mayo if you have nut-free, gluten-free, or other free-from requirements.
