Creamy Quinoa Tomato Soup


Prepared by the wonderful people at Northern Quinoa Corporation, this creamy quinoa tomato soup uses their newest product, extra-fine quinoa powder. This is a great one for cool nights or hot summer days as there is no need to turn on the stove!

By ingredients, this recipe is dairy-free / non-dairy, egg-free, gluten-free, nut-free, peanut-free, soy-free, vegan, plant-based, and vegetarian.

Creamy Quinoa Tomato Soup
  • 3 tablespoons quick quinoa powder
  • 2 cups boiling water
  • 5 roma tomatoes
  • Fresh basil
  1. Add Quick Quinoa Powder and 2 cups boiling water to a food processor. Pulse, then let it rest for two minutes.
  2. Add Roma tomatoes and fresh baby basil. Blend until smooth.
  3. Top with a slice of tomato and sprig of basil if desired.
  4. Add salt to taste.
  5. Enjoy!
