    You may have spotted Urban Cheesecraft in one of my holiday food gift guides, but they’ve since come out a line of everyday products. Urban Cheesecraft Dairy Free Mixes are available in an assortment of cheesy varieties, from firm cheddar blocks to semi-soft brie wheels to creamy fondue and alfredo sauce. They have a unique “make it your own” style. The mixes are naturally top allergen-free in the package, but you add your choice of nuts, seeds, or beans plus oil and water to prepare them.

    The founder of Urban Cheesecraft, Claudia Lucero, is a cheese master. She originally started the company with just dairy cheese kits, but she’s shifted much of her attention to making versatile dairy-free products, like these mixes.

    Urban Cheesecraft Dairy Free Mixes are quite innovative, because they don’t just make different flavors, they also make completely different types of cheese alternatives. For example, the cheddar makes a sliceable wheel, the feta makes a crumbly block, the chevre makes a spreadable vegan “cheese,” and the alfredo makes a sauce.

    stovetop cheese - some shortcuts are not worth it

    I ordered the vegan cheese kit and some extra agar agar in anticipation of making more cheese. It arrived yesterday and the disappointment started. The package was shipped via standard US post and the contents were quite warm. I didn’t know if any of the contents were heat sensitive; it turns out not. 🙂 I started the nuts soaking.

    Making the cheese – nuts rinsed, water measured, agar-agar measured, opened the cheese package and was hit by an unpleasant smell … I still smell it 45 minutes after refrigerating the cheese. Undeterred, I added all ingredients and the oil to the blender and mixed until smooth. Cooked for 5-6 mins. The smell made it unenjoyable and the consistency was looking like playdough.

    Cheese (the brie) is now cooling in the fridge and honestly, I am afraid to try it.

    I gave 2 stars because the instructions were great and I also received the book – I ordered the deluxe kit. I was unhappy not to see blue cheese but then again, stovetop blue cheese doesn’t seem right.

      I have tried the dairy free Brie and Chèvre kit. It came out amazing!!!! texture and tang was spot on!!! She also has a new book coming out soon all in Dairy Free cheesemaking!
