    Instant dairy-free chocolate pudding that doesn’t come from a box? It’s true! This quick recipe goes from pantry to pudding with just four ingredients in five minutes or less! The secret ingredient is silken tofu. I always keep this shelf-stable product on hand, because it is so darn useful. It adds nutrition, thickness, and smooth creaminess to all types of dishes. And it’s a dream in chocolate pudding.

    Instant Chocolate Pudding that’s Light, Healthy, and Dairy-Free

    For a smoother, less-acidic taste and a rich chocolate color, this instant dairy-free chocolate pudding recipe uses dark, Dutch-processed cocoa powder. Some brands that will work nicely include: Valrhona Cocoa Powder, Frontier Organic Fair Trade Cocoa, Hershey’s Special Dark Cocoa, and King Arthur Double Dutch Cocoa Blend.

    Since straight cocoa powder is used rather than melted chocolate, there is less of an allergen concern. But the recipe does require sweetener. Powdered sugar is used for a smooth finish that’s still thick, but we have included options for liquid sweetener.

    This is a sweet dark chocolate style pudding. We like the consistency with firm silken tofu, which is easiest to find. Soft will work, but it will be thinner, and extra-firm sets up more like mousse.

    Ingredients
    • 1 (12.3-ounce) package firm silken tofu, drained
    • ⅔ cup Dutch-processed cocoa powder
    • 1 cup powdered sugar
    • 1 teaspoon vanilla extract
    Instructions
    1. Place the tofu, cocoa powder, powdered sugar, and vanilla in a food processor or blender.
    2. Puree for 1 minute, scraping down sides as needed, or until very smooth.
    3. Divide equally into six dishes and serve. See below for garnish ideas.

    Garnish Options: Optionally top or layer the pudding with dairy-free whipped cream. You can use my easy Homemade Whipped Coconut Cream or a Store-Bought option. Other delicious garnishes include fresh fruit (like raspberries, cherries, or strawberries), a sprinkle of cinnamon, mini dairy-free chocolate chips, or chocolate curls from your favorite dairy-free chocolate bar.

    Refined Sugar-Free Options: If you prefer to sweeten with agave nectar, maple syrup, or honey, you'll want to use less. It will thin out the pudding. Start with just ⅓ cup and add to taste.

      For those of us who are DF AND also Soy-Free:
      They now make a pumpkin-seed based Tofu called PUMFU (in plain/unflavored as well as now flavored options) that you now sub fir the tofu in those recipes that call for it!
      So Yay, for us, huh? 🙂
      Look for it at Whole Foods, online, etc. In the refrigerated sections.
