Jeremy is known as a pioneer in the raw foods movement, having opened and operated one of the first raw food restaurants, The Raw Experience, on Maui, and a second location in San Francisco. He’s also the founder of Loving Foods, a raw foods educational resource company.
In The Raw Truth, Jeremy merges recipes and his wealth of knowledge on raw food living. The first 60+ pages of this book discuss raw food techniques, health benefits, tools, and more. I was especially intrigued by the detailed sections on sprouting and culturing. After this lengthy introduction, Jeremy dives into the recipes, of which there are many … Drinks, Appetizers, Fruit Dishes, Fruit Soups, Savory Soups, Salads, Dressings, Sides, Entrees, and Desserts.
As someone who isn’t an adventurous raw foodist (smoothies and salads are pretty much the extent of my raw food fare), there were still many recipes in this “cookbook” that caught my eye …. Like the Ginger Blast Smoothie (made with pineapple, yum!), Mango Pudding, Creamy Coleslaw, Peanut Curry Dressing, Onion Walnut Pate, Pumpkin Cashew Seed Cheeze, Thai Curry (pictured at left and cover picture!), Nori Rolls, Frozen Fudge, and Carrot Kake.
This is a beautifully done book that contains a smattering of pictures and easy to follow recipes. To get the most out of it, equipment such as a food dehydrator and a juicer would be required, but there are many recipes that can be made by hand, or with more common appliances such as a blender or food processor.
