Would someone please put this bowl away before I eat the whole thing?!  If given the choice, I am the type of person who would choose vanilla over chocolate any day, but Cherrybrook’s Chocolate Frosting has me hooked.  After preparation, the spoon, knife, and bowl I used were nearly spotless before they even made it to the dishwasher.  Have I felt a touch guilty for my over-indulgence?  A bit.  But, was it worth it?  Without a doubt.  Fat content is not my primary concern when preparing foods, yet I was a bit timid with the amount of butter that this frosting called for.  However, to my pleasant surprise it made an enormous amount of frosting.  In fact, it was enough to easily frost a two-layer cake without skimping.  I used the Earth Balance Buttery Sticks (vegan) with perfect results.  The natural “butter” flavor was an added boost that I would recommend over the traditional Earth Balance shortening.  The texture was flawless and could fool any dairy junkie.  The flavor, let’s just say I wasn’t the only one going back for more.  Unlike many dairy free chocolate foods, this frosting didn’t have the overwhelming flavor of cocoa, sugar, or fudge.  But rather, it was deliciously creamy, and seemed to go with just about anything.  We trialed it on cake (of course), fresh strawberries, and (my personal favorite) smashed between Annie’s Honey Bunny Grahams.  A treat the little ones would surely enjoy as well.
