Dairy-Free & Egg-Free Brownie Mix Substitutions
Dairy-free substitutions for brownie mixes are pretty easy and straightforward. Most of the mixes above call for just eggs, water, and/or oil. But if your mix calls for any dairy, the substitutes are simple:
- Butter – Substitute dairy-free buttery sticks, margarine, or shortening.
- Melted Butter – Substitute dairy-free buttery sticks or coconut oil. Other oils might also work.
- Milk – Dairy-free milk alternative or water. For more depth in flavor, you could also use brewed coffee.
- Specialty Dairy – If your mix calls for something like yogurt or sour cream, you can use a dairy-free substitute product, or another moist ingredient like applesauce, pumpkin, or banana might work fine.
Egg-free and vegan substitutes for brownies are trickier. Brownies are denser than cake, so the eggs are key in emulsifying the oil into the dry ingredients. Without them, you can end up with a greasy mess. To prevent this, you need to reduce the fat ratio in the recipe. Here are the changes you will need to make to the preparation:
- Use an egg substitute. We prefer aquafaba, flax “eggs,” or chia “eggs” for brownies. To make flax or chia “eggs,” whisk 1 tablespoon ground flaxseeds or chia seeds with 3 tablespoons water for each egg. If using aquafaba, 3 tablespoons per egg should work well.
- Reduce the oil in half, and replace that oil with more liquid. So if the box calls for 2/3 cup oil, reduce the oil to 1/3 cup and increase the liquid amount by 1/3 cup.
Some test kitchens recommend just substituting the eggs with Greek yogurt. Using dairy-free yogurt doesn’t always produce the same results, which is why we don’t rely on that method.
