    Perfect Peanut Butter and Jelly Smoothie

    March is National Nutrition Month AND National Frozen Food Month. If you think these two don’t fit together, then you’ve yet to discover the healthy magic of frozen fruit. Almost every single day (yes, even when it’s snowing out!) I have a thick, shake-like smoothie made with frozen fruit – it’s my comfort food. And one of my current favorites is this peanut butter and jelly smoothie recipe (blueberry and strawberry “jelly” versions shown). I love to make it in layers not only for looks, but for the culinary enjoyment of having a spoonful with peanut butter, one rich in berries, and then the two commingling. Call it playing with my food, call it savoring every bite, whichever way you look at it, this is pure, nutritious pleasure.

    I LOVE wild blueberries and have been buying this brand for years. It wasn’t until recently that I realized Wyman’s of Maine made so many other fruits. Family owned since 1874, Wyman’s is a premium supplier of wild blueberries, strawberries (the smoothie pictured just above is made with these!), red raspberries, blackberries, cherries, cranberries and mango chunks.     Special Diet Notes: Peanut Butter and Jelly Smoothie

    By ingredients, this recipe is dairy-free / non-dairy, egg-free, gluten-free, grain-free, tree nut-free, soy-free, vegan / plant-based, and vegetarian.

    For a paleo peanut butter and jelly smoothie, swap almond butter or sunflower seed butter (peanut-free options!) for the peanut butter and use light coconut milk rather than milk beverage.

    Serves: 1 big smoothie
    Ingredients
    • 1 large ripe frozen banana, broken into chunks
    • 2 tablespoons natural peanut butter (lightly salted)
    • 1 soft, pitted date (or option below)
    • ⅔ cup unsweetened dairy-free milk beverage, divided
    • ¼ teaspoon vanilla extract
    • ½ cup Wyman's frozen wild blueberries or strawberries
    Instructions
    1. Place the banana, peanut butter, and date in your blender. Add ⅓ cup of the milk beverage and the vanilla, and blend until smooth and creamy. It should be quite thick.
    2. Pour ⅔ of the mixture into a serving glass.
    3. Add the remaining ⅓ cup milk beverage and the wild blueberries or strawberries to the remaining mixture in your blender and blend until smooth and creamy.
    4. Pour the fruit smoothie mixture on the peanut butter mixture. Serve with a spoon or straw!
    Notes
    Date Alternatives: You can use 1 tablespoon dairy-free vanilla protein powder, 1 teaspoon honey or agave nectar, or 5 drops pure stevia extract in place of the date.

    Optional Add-Ins:
    ~ 1 to 2 tablespoons oats with the peanut butter mixture.
    ~ ⅛ to ¼ teaspoon ground cinnamon with the peanut butter mixture.
    ~ Handful of spinach with the blueberry mixture (blueberries mask the color & flavor!).
    ~ Stevia or sweetener, to taste, if craving a sweeter shake.
