    Sweet-Tart Watermelon Lemonade and Icy Watermelon Cubes

    Watermelon is so refreshing in summer, and it always goes on sale for a steal. But it can be hard for our small household to finish an entire watermelon. To make sure we don’t waste an ounce of that sweet, juicy flesh, I use a few naturally dairy-free recipes and ideas. If we have strawberries on hand, I blend delicious Strawberry Watermelon Smoothies. If we have lemons on hand, then I make the sweet-tart watermelon lemonade recipe below.

    Any leftover watermelon gets pureed and frozen into icy watermelon cubes! They’re perfect for blending into smoothies, floating in drinks, or making into single servings of this sweet-tart watermelon lemonade.

    This refreshing summer drink has a wonderful flavor that isn't too sweet. It has a nice natural balance from the fresh watermelon puree.

    Serves: 2 glasses
    Ingredients
    • 6 ounces watermelon flesh (yields ¾ cup once pureed; about 1 cup of melon balls), seedless or seeds removed
    • ¼ cup fresh-squeezed lemon juice
    • 3 tablespoons agave nectar*
    • ¾ cup cold water
    • Ice
    • Lemon wedges or slices, to serve (optional)
    Instructions
    1. Place the watermelon, lemon juice, agave, and water in your blender and puree until liquefied and smooth.
    2. Fill two large glasses and fill with the watermelon lemonade. Optionally garnish with lemon wedges or slices if desired.
    Notes
    *You can substitute simple syrup. If you opt to use honey, you'll need to puree the beverage in your blender until the honey dissolves. If you want to reduce the sweetener to 1 to 2 tablespoons, add a few drops of liquid stevia, or to taste.
