Wild Blueberry Pumpkin Mug Cake


I was recently presented with the challenge of making a holiday-inspired mug cake using Wild Blueberries. My first thought was snickerdoodle, but the idea of Wild Blueberries and pumpkin was too intriguing not to try. And since it takes just minutes to make, why not try a Wild Blueberry Pumpkin Mug Cake?

Wild Blueberry Pumpkin Mug Cake Recipe (Vegan + Gluten-Free Optional)

Oh my heavens, this could be my new favorite flavor pairing. The warm spices, the earthy pumpkin, and those wonderfully sweet-tart little berries smattered throughout make for a well-balanced and addictive treat. And just look at that moist, tender crumb! It took me every mug in the house to perfect this recipe for you, but I wasn’t going to settle.

The recipe for my Wild Blueberry Pumpkin Mug Cake is naturally vegan, optionally gluten-free, and literally does take just minutes to make! But if you prefer, it can be baked in little single-serve ramekins (shown in the second picture of the pinnable image below). I’ve included directions for that, too. Well, what are you waiting for?     • I’m glad that comes across in the picture Cricket, as that is what I was trying to show – it is seriously fluffy! I didn’t go by the ratios of other mug cake recipes, but rather adapted an old favorite full-size, fluffy pumpkin cake. I had to change it a ton, but kept that integrity.
