Dairy-Free Sweet Potato Casserole

Ingredients
Sweet Potato Filling
- 3 tablespoons water
- 1 tablespoon ground flax
- 3 cups mashed sweet potatoes
- ½ cup brown sugar
- 2 tablespoons oil (optional)
- ½ to 1 teaspoon ground cinnamon
Topping
- ⅔ cup lightly crushed gluten-free crispy rice cereal (use Enjoy Life for top allergen-free)
- ⅓ cup oil or non-hydrogenated shortening, melted
- ½ cup brown sugar
- ½ cup pumpkin seeds or sunflower seeds
Instructions
- Stir the ground flax with the 3 tablespoons of water in a small bowl. Let sit 10 to 15 minutes to gel before use.
- Mix the Topping ingredients and set aside.
- Blend the Sweet Potato Filling ingredients (including the flax mixture) and place in a lightly greased casserole dish.
- Bake at 400°F for 35 to 40 minutes, or until heated throughout the casserole dish.
- Add topping and bake for 10 more minutes.
