A few years ago, NotMilk by NotCo entered the market to rave reviews. It was arguably the first milk alternative to make a fairly successful attempt at mimicking the taste and consistency of dairy milk. Their portfolio quickly grew to include Whole Milk, 2% Reduced Fat, 1% Low Fat, Chocolate, and Barista varieties. But like countless other companies, NotCo has made changes to sustain profitability. The NotMilk product range has shrunk, and they are now abandoning the refrigerated aisle. But have no fear, NotMilk is still available in shelf-stable packages!
NotMilk is Not Milk, but AI Says it Tastes Just Like It
Because of the uniqueness in this brand, and their changes over the years, I’m going to answer a few FAQs before jumping into the ingredients and nutrition facts.
NotMilk FAQs
Was NotMilk Discontinued? As mentioned, the refrigerated NotMilk line has been discontinued. You will no longer find them in the refrigerated section at grocery stores. But NotMilk has not been discontinued! You can still buy it in shelf-stable packages. It’s available in multi-serve 32-ounce cartons and 8-ounces singles.
Did NotMilk Change their Formula? They have changed it a couple of times. We do our best to keep up with the changes in the ingredients and nutrition facts below. In the most major change, they removed the coconut and the chicory root. This reduced the fat, calories, fiber, and some say, the richness in the flavor. It also made some of those “odd” ingredients, like pineapple, a bit more prominent.
Who Owns NotMilk? This milk alternative was created by the Chilean company NotCo. They received backing from several prominent venture capitalists, including Jeff Bezos. But the company is still independent.
Is NotMilk Truly Dairy-Free? With all of the confusion around technology and food, it’s hard to tell what’s really dairy-free these days! Some companies are using genetic engineering to create real dairy proteins from plants. Those products are vegan but not dairy free! NotCo is using advanced technology, but for the formula, not the production process. They used AI to develop a recipe that replicates the taste and texture of dairy-based milk. It’s vegan AND dairy-free, from beginning to end, and is made with the ingredients listed below.
Whole (also available in singles)
Ingredients: water, sunflower oil, pea protein, contains less than 2% of: sugar, pineapple juice concentrate, dipotassium phosphate, calcium carbonate, gellan gum, acacia gum, salt, monocalcium phosphate, natural flavor, cabbage juice concentrate, vitamin d2, vitamin b12.
Nutrition (per 1 cup): 100 calories, 8g fat, 4g carbs, 0g fiber, 3g sugars (includes 2g added sugars), 4g protein. Fortified to achieve the following RDA percentages: 25% vitamin D, 25% calcium, 35% vitamin B12.*
Chocolate (also available in singles)
Ingredients: water, sugar, contains less than 2% of sunflower oil, pea protein, cocoa (processed with alkali), pineapple juice concentrate, calcium carbonate, natural flavor, acacia gum, gellan gum, salt, dipotassium phosphate, cabbage concentrate, vitamin d2, vitamin b12.
Nutrition (per 1 cup): 130 calories, 5g fat, 16g carbs, 1g fiber, 14g sugars (includes 13g added sugars), 4g protein. Fortified to achieve the following RDA percentages: 25% vitamin D, 25% calcium, 35% vitamin B12.*
Barista
Ingredients: water, sunflower oil, organic cane sugar, oats, contains less than 1% of: chickpea protein, chicory root fiber, pineapple juice concentrate, salt, tricalcium phosphate, dipotassium phosphate, gellan gum, acacia gum, natural flavor, cabbage juice concentrate
Nutrition (per 1 cup): 70 calories, 3.5g fat, 8g carbs, 1g fiber, 4g sugars (includes 3g added sugars), 1g protein. Fortified to achieve the following RDA percentages: 20% calcium.*
Discontinued NotMilk Varieties
NotCo has completely discontinued their 2% Reduced Fat and 1% Low Fat NotMilk milk alternatives in the U.S.
NotMilk NYC is Now Nuthatch
There was another company called NotMilk NYC. They’ve been around longer, but NotMilk from NotCo does has a trademark on the name, so they were forced to change their name. NotMilk NYC is now Nuthatch. Nuthatch is small-batch nut milk produced by real hands with simple whole food ingredients. NotMilk from NotCo is mass produced with technology for a mainstream appeal and price point. The post above is for NotCo’s product.

Smooth, pleasant tasting
Doesn’t really taste like milk, but the consistency and appearance are very similar. It has a very mild tropical/pineapple taste. I find it very pleasant and enjoy drinking it and using it for cereal and smoothies. I’m still on the fence about whether I like it in tea/coffee, but overall it’s a great product. It’s the smoothest plant based milk I’ve tried.

Delicious
I was skeptical ONLY after reading these reviews.. I opened it up poured a glass, absolutely delicious and doesn’t have that weird aftertaste of an animals insides lol. It has a vanilla-y aftertaste, thankfully I don’t taste pineapple because I hate pineapple. This is really good I’m super happy with it. I got the whole milk.
Not for me
I’ve tried both varieties and couldn’t finish either of them. Both have a very sharp pineapple taste which I find overbearing and unpleasant. I didn’t find that it paired with cereal as well as most dairy alternatives, and couldn’t drink it on its own. There are other plant-based brands which taste more like dairy.
Finally!
This is the milk substitute I’ve been looking for! I used yo buy homo milk (3.5%) so I bought the whole notmilk product. It is the first substitute I can tolerate in my tea. I made a veggie casserole with white sauce and it was great. And it heats up nicely for a latte. Super pleased. I hope they start carrying it in all the local grocery stores- right now I can only find it at Save-on Foods. Two thumbs up!
Bon goùt et colore le café comme j'aime
Depuis quelques mois, j’utilise ce lait et j’en suis heureuse. Intolérante au lactose, j’utilisais le lait de coco que j’aime aussi mais il ne colore pas le café comme le fait le lait régulier. Pour ma part même si le lait sans lactose existe, je n’aime pas l’arrière goût du lait de vache. Donc j’aime bien le NotMilk. Malheureusement il est difficile d’en trouver car souvent non disponible pour le peu de vente qu’il apporte à certaines épicerie.
English Translation: Good taste and colors the coffee as I like
For a few months I have been using this milk and I am happy with it. Lactose intolerant, I used coconut milk which I also like but it doesn’t color the coffee like regular milk does. For my part, even if lactose-free milk exists, I don’t like the aftertaste of cow’s milk. So I like the NotMilk. Unfortunately it is difficult to find because often not available for the few sales it brings to some grocery stores.
Not So Good
I noticed when I removed the cap it was not white like real milk which turned me off…I tried it in my tea and it’s nothing like the ad “Looks Like Milk Tastes Like Milk” so was very disappointed…I had to eliminate dairy recently and miss my cup of tea with real milk..
Delicious Substitute
Love the taste, texture and pretty much everything about this NotMilk. Great in tea, coffee & even good in cold cereal. Im a big fan of the subtle coconut, pineapple taste!

It’s not milk… nor does it taste like it
The old milk I liked was discontinued I was left going back to normal cows milk. I only use milk in my coffee, for lattes, and all the non-dairy milks alter the taste. This tastes different too, but not as overtly a something other than milk taste. However because I’m going back on a keto diet, this is the best and closest alternative I’ve found so far between flavor, texture, and sugar content. Drinking on its own it tastes like skim milk that soaked in Rice Krispie cereal.
There’s definitely a grainy/rice taste but it’s subtle… and actually pretty good if you are not trying to exactly replicate cows milk.
However, In my double espresso, it wasn’t as good as dairy milk taste wise, but it held up when steamed and frothed, it reacted to steam almost exactly like cows milk. Texture they got perfect.
Overall, I’d recommend this, especially if you want it for cereal or oatmeal, and for coffee it will do until I’m off my keto diet.
