Dairy-Free Sweet Potato Casserole

Serves: 8 servings
Sweet Potato Filling
  • 3 tablespoons water
  • 1 tablespoon ground flax
  • 3 cups mashed sweet potatoes
  • ½ cup brown sugar
  • 2 tablespoons oil (optional)
  • ½ to 1 teaspoon ground cinnamon
  1. Stir the ground flax with the 3 tablespoons of water in a small bowl. Let sit 10 to 15 minutes to gel before use.
  2. Mix the Topping ingredients and set aside.
  3. Blend the Sweet Potato Filling ingredients (including the flax mixture) and place in a lightly greased casserole dish.
  4. Bake at 400°F for 35 to 40 minutes, or until heated throughout the casserole dish.
  5. Add topping and bake for 10 more minutes.
