This healthy raw hemp cookies recipe was shared with us years ago by Manitoba Harvest, and I thought it deserved a refresh. It was created by Kristen Suzanne, author of numerous raw food cookbooks. Unlike traditional cookies, these have a doughy bite, are shaped like truffles, and are downright nutritious. You can enjoy them for dessert or as healthy snack bites on go!
Special Diet Notes: Raw Hemp Cookies
By ingredients, this recipe is dairy-free / non-dairy, egg-free, gluten-free, grain-free, nut-free, peanut-free, soy-free, vegan, plant-based, vegetarian, optionally paleo, and top food allergy-friendly.
- ½ cup unsweetened shredded coconut
- ⅓ cup raisins
- ¼ cup hemp seed butter (can sub your nut or seed butter of choice)
- 2 tablespoon raw agave nectar or honey
- ¼ teaspoon vanilla extract
- Pinch Himalayan Crystal Salt or sea salt
- ¼ cup shelled hemp seeds (also called hemp hearts)
- Stir the coconut, raisins, seed butter, sweetener, vanilla, and salt together in a small bowl until well combined. Then mash it together with your hands. Yes, it’s sticky and gooey.
- Place the hemp seeds in a small bowl.
- Roll the dough into balls, using about 2 teaspoons worth of dough for each. Then, gently roll the balls in the hemp seeds to coat
- For best results, let them “set up” and get firm in the refrigerator for about 20 minutes before serving. Store leftovers in the refrigerator or freezer.
