    I heard rumor that today is National Toast Day, and what better way to celebrate than with a delicious, healthy toast recipe! This hearty hummus toast is rich in fiber and plant-based protein. It’s also loaded with nutritious vegetables and seasoned for that perfect savory flavor. You can enjoy it for a quick breakfast, or take it on the go for lunch!

    Hearty Hummus Toast with Avocado, Arugula, and Pistachios

    You can top it any way you like, but the combination of rich avocado, fresh arugula, and crunchy radishes and pistachios really hits the mark. And don’t be shy with the salt and pepper. It helps the flavors pop.

    The picture shows this recipe with plain hummus, but there are many flavors of dairy-free hummus that would be delicious. You can use a store-bought roasted red pepper or roasted garlic hummus, or go with a homemade version. Some tasty recipes that work well on this hummus toast are Olive Hummus, Artichoke Hummus, and Beet Hummus.

    Ingredients
    • 2 tablespoons hummus (any flavor - see favorites above)
    • 1 slice whole wheat bread or hearty gluten-free bread, toasted
    • ½ cup sliced avocado
    • 1 sliced radish
    • ¼ cup arugula
    • 1 tablespoon chopped pistachios
    • Salt, to taste
    • Black pepper, to taste
    Instructions
    1. Spread the hummus on your toast, and top it with the avocado, radish, arugula and pistachios.
