    I love having homemade spice mixes on hand like this breakfast sausage spice blend. It makes food prep so easy and flavorful! Plus, it avoids unwanted allergens, like milk powder, that can pop up in some seasonings. This is a tasty, but very basic mix. You can add other spices like fennel, oregano, or crushed red pepper if you’re feeling fancy. I add crushed red pepper flakes in this Basic Chicken Breakfast Sausage Recipe and really jazz the spices up in this Turkey Breakfast Sausage Recipe.     This simple mix is delicious with ground pork, ground turkey, ground chicken, or even vegan ground "meat."

    Serves: 10 ounces (enough for 30 pounds of meat)
    Ingredients
    • 5 ounces ground black pepper
    • 2 ounces salt
    • 2 ounces ground nutmeg
    • 1 ounce crushed sage
    Instructions
    1. In a medium bowl, stir together the pepper, salt, nutmeg, and salt. Or you can add the ingredients to a storage container, seal and shake to combine.
    2. Store the spice mix sealed in an airtight container at room temperature.
    Notes
    Basic Prepared Breakfast Sausage: Place 3 pounds of ground meat in a large bowl. Add 1 ounce of the spice mix and gently stir until the spices look evenly distributed. Do not overmix. If you have time, let the meat chill in the refrigerator for an hour or more before cooking. Shape the meat into small, 1.5-ounce patties. The patties can be frozen. To cook, heat a tablespoon of oil in a large skillet over medium heat. Add some patties and cook for about 5 minutes per side, or until cooked through. (The time will depend on the meat you use and thickness of the patties.)

      My 2 year old has to be milk dairy soya gluten wheat free. all he has is warbs free from brown bread n heinz beans n tescos waffles n kara milk n free from butter. Before we found out he had intollirance he loved sausages burgers scrambled egg etc .. Now very limited need recipes so he can enjoy food again or a shop were can buy from.
