- 5 ounces ground black pepper
- 2 ounces salt
- 2 ounces ground nutmeg
- 1 ounce crushed sage
- Combine the pepper, salt, nutmeg, and salt in an airtight container. Store sealed at room temperature.
- Stir 1 ounce of this spice mix into 3 pounds of ground meat or "meat." If you have time, let the meat chill in the refrigerator for an hour or more before cooking.
